Coaxial speakers are 1 speaker which throws the sound wave only 1 way. With Component sets you can separate the mids and highs for a better acoustical separation and better sound. I would recommend Component sets over coaxial speakers. But, the thing with component sets is that your cars factory system doesn't always come with component speakers so you will have to get a certified installer to locate a place and install the tweeter for the component sets. Co-axial means 2way (1 tweeter, one woofer), tri-axial means 3way (1 tweeter, one midrange, one woofer), etc, etc, etc -These all have the different drivers mounted together for ease of installation.
Components have the drivers separate. This allows for better power handling. Period. That's it.

The optimum placement of components is for the tweeter to be right next to the woofer. Google 'point source'.

While there are exceptions, coaxial speakers are generally a simple drop-in installation that is slightly more efficient (spl- and install time-wise) than a component set.

With component speakers, you get a more complicated installation: where do we put the tweeter? What about this crossover? You'll also need an amplifier to power components. They like lots of power, thanks to the crossover.
